OUR STORY
Margo and Ayden's journey began as a creative husband and wife duo in the world of product, fashion, and sport photography, where they created content for international brands. It was during this period that they adopted a plant-based lifestyle and then when COVID hit, they decided to make a change.
During lockdown they found themselves searching for a simple pleasure: a truly exceptional plant-based croissant. With no prior experience in baking, Margo embarked on a mission at home, to master the art of French pastry. Through countless hours of dedication, watching youtube tutorials, and reading every baking book she could get her hands on, Margo discovered that it was possible to craft plant-based pastries that not only rivaled the best conventional options but also championed sustainability. That's when they decided, they had to share it with the world!
Taking a leap of faith, they invested their savings to open their first bakery. It was a romantic yet exhausting trial by fire. Margo would hand roll pastry in the bakery from 02:00, wait for the pastry to rise and ready to bake before opening with Ayden as her assistant, making cookies and prepping dough.
Now with 2 shops in Amsterdam and a team of 20 and growing, Margo's is a testament to the idea that quality, tradition, and sustainability can harmoniously coexist. By carefully selecting ingredients like regenerative farming flour, fair-trade chocolate, and plant-based butter, we were able to create pastries with a significantly lower carbon footprint, approximately 65% less than a typical pastry. We are proud to offer pastries that delight the senses and contribute to a more mindful way of living, all while staying true to our commitment to exceptional taste with no compromise.
